I love my slow cooker, but have not been using it like I should....today I was so thankful for it!
So frozen chicken, black beans, corn, re fried beans, cumin, tomatoes (normally I use a can of diced tomatoes) and later I added in onions and celery and hot sauce.
This soup is so forgiving.
Throw everything in the slow cooker and add some water to cover it or use chicken broth or chicken broth and water.
You pick, your an adult, it's all good.
I set mine for 8 hours but we ate before that.
Now leave it and take care of your kids, fold your laundry, have lunch, change some diapers again, you're an adult.
I'm sure you don't need me to hold your hand while this cooks up for the day.
My girly barfed a second time so it was actually her fourth outfit change (the third was after they two went outside and decided to 'swim' in their pool that was a puddle of water).
I put her in my fantastic new kitchen sink to play while I cut up the celery and onion, this was about 5 or 6 hours after starting the slow cooker
I put those in the slow cooker and pulled out the chicken breasts....
they look GROSS, I'm warning you now, be prepared
Shred the chicken - I use forks.
If you did more chicken than you think you want in the soup, freeze it for later,
it's a smart idea - really
Put it all back in the slow cooker and walk away again
I grabbed my son and headed over to my Aunt and Uncles house
the little man got a chance to help operate a great big 'digger'
He had a serious face the entire time until the machine turned off, then he was so excited
how fun to be able to do this for him
So then we headed home to this......
Let me explain,
we walked in the house an hour before dinner time
and the smell was glorious
- I can't translate smell over the computer - but mmm, mmm
And I know my fly strip is full, come one people, I live by farms, there are flies, that is how it is
Add a bit of hot sauce, you decide the amount - we've been thru this, it's all good
Serve it up with cilantro, avocado, shredded cheese, sour cream, and tortilla chips
Sooooooooo Goood, Sooooooooooo Easy
My husband had 4 bowls of it, again, I'm just sayin...goooood

ReplyDeletefunny you ask Karen...I actually bought the dry, but didn't have time soak them and didn't do them in the pot b/c I thought they would leave the muggy look. I found a link on how to do the beans overnight in a slowcooker...I'll let you know how it works out!
