Lime Chicken


I found an interesting
recipe for Lime Chicken
it looked easy
I made changes
to work for us

Lime Chicken Wraps

Boneless Skinless Chicken Breast
zest of 2 limes
juice of 2 limes
1 cup of honey Dijon mustard
1 tablespoon soy sauce

I was making a very large amount
so I could also give this away
I baked the chicken
at 350 until done
about 30-45 minutes

I cut up a large onion
diced 4 cloves of garlic
cooked with coconut oil


added some very yummy
very colorful
vegetables


cook the vegetables
until tender crisp
slice up the chicken
add to the veggies

mix up the sauce

the lime zest
and lime juice
just before the
soy sauce and
honey Dijon mustard
are added


add the sauce
to the chicken
and vegetables
BUT
when I tasted this
it was VERY limey
I was worried
I took a minute
and decided I needed
to make these into wraps
to make them work
I mixed in the brown rice
then we had this on wraps
with sour cream and cheese
this saved the meal


I was nervous
I was sending this to a family
I hope they liked it
my family
actually
very much enjoyed the meal
as wraps, this was very good
my little man loves wraps
next time
I would do more vegetables
then chicken and rice
but that's because I want
more color in a meal

Whole Wheat Zucchini and Carrot Muffins


I found the recipe
on the Tasty Kitchen Site
I changed it a bit
and we are enjoying the
yummy muffins

Whole Wheat Zucchini and Carrot Muffins

⅓ cup Rolled Oats
2 cups Whole Wheat Flour
⅓ cups Brown Sugar
2 teaspoons Baking Powder
¼ teaspoons Baking Soda
½ teaspoons Salt
1-½ teaspoon Ground Cinnamon
1 1/2 cups Grated Zucchini
1 1/2 cups Grated Carrot
1 cup Buttermilk
2 whole Eggs
¼ cups Butter, Melted

Preheat oven to 375 degrees
Stir together all dry ingredients in a large mixing bowl


Fold in the grated zucchini and mix until it is well coated with the dry ingredients




In a small bowl whisk together the eggs, buttermilk and melted butter


Fold into dry ingredients stirring just until combined


Spoon batter into prepared muffin cups


Bake about 20 minutes

The original recipe
calls for a struesel topping
I didn't add this
but I would next time
these muffins are not sweet
I normally would cut
the amount of sugar
but I didn't this time
as it was such a small amount already
the struesel would add
a touch of sweetness
these were good
even without the sweetness


in other news
we added to our tribe
my sister gave us
a little fish tank
so the kids each
have a little gold fish
my little man
named his Dinosaur
my little girly
named hers fish
little Lily
she likes them


I also got a fish
Simon
he's in solitary
he should have been okay
with the gold fish
but he must have decided
their fins were too pretty
so he attacked them - a lot

Spaghetti Squash, Roast Veggies and Farmer Sausage


I am starting to LOVE
Spaghetti Squash
I'll tell you again
if you have not tried it
you really must
and Roasted Vegetables
melt in your mouth goodness
cut up your veggies
the more color the better
mix with grapeseed oil
and fresh cracked pepper
bake at 400
45 minutes to an hour
stirring a few times


take your spaghetti squash
poke holes all over it
or it WILL explode
trust me
I know from experience
then put the squash
in your microwave for 5 minuets
turn the squash
microwave another 5 minuets
check to see that the squash is tender
if not, turn it around again
and microwave more
cut it open
scoop out the seeds
use a fork to remove
the spaghetti like flesh
the kidlets were circling
so I let them munch
on the salad
while I finished up


With the squash
I mixed in pesto
mozzarella
cooked farmer sausage
and the roasted vegetables


so good
go now
try it
it's an easy meal

Pita Pizza


I struggle
to come up with
healthy lunch ideas
for my kids
we sometimes have leftovers
but not to often
and I really try
not to use many
prepackaged foods
here is one lunch we enjoy

grab some pita shells
shop us some yummy
colorful veggies


I do buy from costco
premade pesto
I'm happy with the ingredient list
I can pronounce all of them
when basil is more available
I'll try my hand at making my own
until then we enjoy this one
I have used spaghetti sauce
but we really enjoy pesto


then load up your veggies
the more color the better
I also add some
diced up deli ham


add your cheese
as little
or as much
as you desire
any type you have on hand


bake at 350
15 - 20 minutes
then turn it to broil
for about 5 minutes
keep an eye on it
so it's not overdone


we love a thin crust
this comes out nice and crispy
and is super good
the next day cold

Sloppy Joes


Sloppy Joes
you may not think
healthy
so I wanted to try

I was making enough
to also bless a family
so it was a large batch
these veggies
yes every single one
was included in the
sloppy joe mix
just the mix
not the salad
can you tell from
the picture at the start?


This is when
I love my food processor
so handy
here are those veggies again
I sauteed them
in a bit of grapeseed oil


I added about
3 pounds of uncooked ground beef
and a can of crushed tomatoes


mixing everything together
I also added
ketchup
mustard
a bit of brown sugar
BBQ Sauce
salt and pepper
I didn't measure
I guessed
sorry about that


I cooked this for
a good long time
minimum of an hour
to ensure the beef
is cooked all the way
I simmered it for at least
2 hours to meld the flavours


the kids and I
had this for lunch
and we all had it for dinner
it was yum
my husband found it
a little sweet
but took it to work
and ate it all
my kids loved it
it was a very easy
meal to double
you could top it
with cheese
pickles
anything you want

Attempt #2 - Tofu Stirfy


I was missing a few ingredients
for the Potato Leek Soup
so I had to rethink my dinner

Tofu Stir fry

I had to try again
I just knew I could
make it better
then my first attempt

1 pkg firm tofu
2 TBSP grapeseed oil
1/2 yellow pepper
1/2 red pepper
1/2 yellow squash
1/2 zucchini
1 small shallot
stir fry noodles
stir fry sauce
small amount soy sauce

So this time
I fried the tofu
in the oil
until it was crisp
then added
a small amount
of soy sauce to the pan



in a separate pan
I cooked up the veggies
and the noodles
added the sauce
(it was a premade one)
just before I served it
I added the tofu
to the veggie/noodle mix
that is what was
left of the tofu
considering my little man
was stealing it while I cooked

the result
a much more edible

he ate this up
and loved it
my main man and I
enjoyed this much more
then my first attempt
the girly
she didn't eat much
she is still pretty sick

the kidlets
they had a fun day
trying on their space helmets



and they flew
in their space ship
of course they did
because they had
the helmets


they also spent
some time coloring
on the floor
on paper on the floor
that is


and they took a drive
I'm not sure where
but a drive
or so I'm told


it's nice that
my little man
is feeling somewhat better
my girly
has her moments
she's not feeling
super great yet

Zuchinni/Carrot Pancakes and Gelderman Sausage

It took all my will power
I resisted
it was difficult
I did not phone for pizza
as bad as I was craving for it
as much as I didn't want to cook

We went to the farmers market
I always like to look around
see what there is to see
Gelderman farms had a booth
they have amazing naturally raised pork
we bought some of their new garlic sausage
it smelled so good
so good that while it was defrosting
the cat got into it



being the frugal person I am
we still had it with dinner
I just cut off the ends where the cat chewed
sorry if that grosses you out
that's how we roll here



this was so so good
I can see why that cat wanted it
really amazing
and it's local
and natural
I know it really is
I've been to the farm
I've had numerous products from them
all amazing and good
you can get it at the local farmers market
and a few other places, like Neufelds

Check out these amazing carrots
from Friesen farms
organic and so good
and yes carrots come in colors other than orange



I've made zucchini pancakes before
this time I added the purple carrots
my family couldn't get enough of them
and yes, I know I'm weird with food
my kids don't know any different
I know I feed them strange things





the kidlets and I had time to hit the park
the girly decided to try
and jump off the slide
it was pretty cute




and the little man
he's turning into the climber
he loves the park
as most all kids do
