Indian Spiced Yogurt BBQ Chicken #2


I've BBQ'd an
Indian Spiced Yogurt Chicken
before and we enjoyed it
my in laws came for dinner
the meal I had planned
was a fair amount of work
so I wanted something easier
and I had some Greek Yogurt
that needed to be used

12 bone in, skin on chicken thighs
1 tub greek yogurt
3 tablespoons Garam Masala
1 tablespoon cumin
1 tablespoon tumeric
add it all into a ziplock bag
and mush it all around
to coat all the chicken


Warmed the BBQ on high
Turn off half the BBQ
put the Chicken Thighs
on the half that is off
this is called
indirect heat for cooking


close the lid
leave it to cook
for a minimum of 2 hours
checking about every half hour
you don't want to lose the heat
move around any pieces
that look to be cooking fast
with those that are cooking slow
but keep the moving to a minimum
cooking it for 2 hours or more
will make the skin nice and crisp
and the meat nice and moist


I served this with brown basmati rice
and roasted vegetables
including half an acorn squash


if you have not cooked
with an acorn squash
it's a bit of a tough squash
use a good knife
to cut the squash in half
scoop out the seeds


cut the squash into wedges
you could sprinkle some nutmeg
and roast it like this
the squash is very versatile


I peeled the skin off
and diced it small
and roasted it with
a ton of other
very colorful veggies


This was a very
very wonderful meal
my kidlets
they each ate three pieces of the chicken


my mother in law
is a fantastic baker
today she brought a homemade pie
rhubarb, apple and banana


she used apple and banana
because she cut the sugar
and used these to help sweeten the pie
so fantastic as always

Indian Style Rice



So you can't have
Indian Butter Chicken
with some yummy rice

Here is the latest recipe
I found to give a try

Indian Style Rice Recipe
If you don't have whole cardamom pods
or stick cinnamon, add a pinch of each ground in with the cumin

Ingredients
2 cups long-grain rice, preferably Basmati
8 cups water
2 teaspoons salt
2 cloves
2 cardamom pods
One 2-inch piece of cinnamon
3 Tbsp vegetable oil (or ghee if you have it)
1/2 teaspoon dark mustard seeds
1/2 teaspoon cumin seeds
I used cumin powder
1/4 teaspoon chile flakes
1 medium onion, chopped
3 chopped garlic cloves
I omitted this
as I ran out of garlic
so sad

1/4 teaspoon turmeric
I omitted this

Place rice in a sieve and run cool water through it to rinse it until the water runs clear


Soak the rice in cool water for 30 minutes. Drain.


Bring 8 cups of water and the salt to a boil in a large pot. Add the rice and stir. Add the cloves, cardamom and cinnamon and simmer for 10 minutes. Taste the rice, and test if it is done to your taste; rice can take more or less time to cook depending on how old it is. If still too firm, cook a few minutes longer.




When the rice is cooked to your liking, drain the rice into a colander and rinse with cold water to stop if from cooking. Remove the cloves, cardamom and cinnamon and discard. Set the rice aside to drain.

In a pan large enough to hold the rice, heat the oil over medium-high heat. Add the mustard and cumin seeds and the chile flakes. Cook until the mustard seeds start popping


then add the onion. Sauté until the onion begins to brown, about 5-7 minutes.


Add the garlic (if you didn't run out like I did) and sauté another 2-3 minutes. Add the rice and mix well. Sprinkle the turmeric over the rice and mix well. Cook for another 3-4 minutes, stirring often.

We enjoyed this rice dish
it was very tasty
mmmmm mmmmm mmmmm
I'll be trying it again
when I find my next
Indian dish to make

My in laws spent
some time coloring
with my kidlets
it was really very sweet

Easy Indian Butter Chicken


I am always
looking for an
authentic Butter Chicken Recipe
if you have tried
butter chicken
chances are you love it
I just wish I could
make it like the restaurant
we order it from

So when this was delivered
to my email in box
I was going to give it a try

Easy Indian Butter Chicken

here is my version

1/4 cup butter
1 onion, minced
1 tablespoon minced garlic
1 (15 ounce) strained tomatoes
1 can evaporated milk
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 1/2 teaspoon garam masala
3 large skinless, boneless chicken breast, cut into bite-sized chunks

saute the butter onion and garlic
until just browned


add the tomatoes


add the evaporated milk


add the salt
I used half the amount
2 teaspoons sounded
like a lot


garam masala
I increased this amount
for the flavour


add the cayenne pepper
I cut the amount
I was worried about
it being to much spice
for my little ones


I simmered this
while I cut up the chicken
then added the still frozen chicken
to the sauce
brought it to a boil
and simmered it
for half an hour


I served this with
some indian rice
the recipe will be
posted tomorrow
I had high hopes
to make some nice
indian naan
but I didn't plan
my day well
so I used pita shells
heated over an open flame
this worked great


We all enjoyed this
it was very close
to what I've been
trying to achieve
it's missing something
I'm just not sure what
also
I would not cook
the chicken directly
in the sauce
this chicken caused
the sauce to have
a different texture


even my little man
ate a bunch
he thought it was great
to roll it up in the pita
he loves wraps
so this worked great

if there is a bread
on the table
she doesn't tend to
eat much of anything else
so I don't often serve bread
she ate the pita
later she ate the chicken
to which I had to make
many different animal noises
in order to convince her
but it worked

Curry Chicken Stirfy


My kids are not
big fans of curry
so I'm trying to scale back
my husband and I
really enjoy curry
so we are going back to mild
rather then just
going full force into flavour

Curry Chicken Stirfry

2 - 3 boneless skinless chicken breast
1 tblsp grape seed oil
1 tblsp mild curry powder
salt and pepper
one cut onion
an assortment of sliced
colorful veggies
1 can of light coconut milk
1-2 tblsp mild curry powder
2 tblsp lime juice
salt and pepper...again

heat the oil in the pan
add the cut chicken
add 1 tblsp mild curry powder
add salt and pepper
cook until chicken
is no longer pink


cut up the veggies
make it beautiful
the colors are wonderful
and it's all very tasty


have your helper
add the veggies
cross your fingers
that not too many land on the floor


let the veggies cook
just for a little bit
then add the coconut milk
curry powder
lime juice
salt and pepper


it was at this point
I realized my can opener
was in 2 pieces
this was not a good thing
I attempted to fix it
it didn't work
I had to cross my fingers
and find my old rusted
can opener in the back of a drawer


your helper might
want to help here too


let this cook
and come to a boil
the sauce will thicken
just a bit


we had this on brown rice
with a salad
it was really very good


both kids loved it
in fact
girly wanted to eat it
right from the pan


I will make this again
but coconut milk
is so high in fat
I will try it with
chicken stock
and see how it goes

Spiced Chai Concentrate




Chai
I love it
to have authentic Chai
ohh mmmmm
I love Soy Chai Latte
I've tried to make Chai before
but none of them
have been as good as this one
and I even forgot an ingredient!

Amazing Spiced Chai Concentrate

4-½ cups Water
1 stick Cinnamon
1 piece Fresh Ginger Chopped
7 whole Cardamom Pods
2 whole Star Anise Pods
10 whole Cloves
¼ teaspoons Freshly Ground Black Pepper
½ teaspoons Freshly-ground Nutmeg
1 teaspoon Orange Zest
10 teaspoons Green Or Black Tea Or 10 Tea Bags
⅔ cups Brown Sugar
1 Tablespoon Honey
1 Tablespoon Vanilla


Bring the water to a boil. Add the spices and tea, remove from heat and let steep 15-20 minutes, depending on how strong you want it


Strain and add the brown sugar, honey, and vanilla. Stir to combine.


Mix 1 part concentrate with 1 part milk, heat and enjoy or pour over ice.
For a stronger flavor, mix 2 parts concentrate with 1 part milk or half-and-half
I mixed the chai and milk and heated this on the stove until it just started to boil


WOW
this was good
even without the GINGER
opps, yes, I forgot the ginger
I always have ginger in the house
I can't wait to make more concentrate
and be sure to add the ginger


Today, I accomplished
much
along with the Chai
I made Granola
fluffy buns
and Black Bean Burgers
but my kitchen suffered
see the container on the floor
it's parm cheese that didn't
make it into the burgers
it disappeared off the counter
I found it when I took this picture
my amazing husband cleaned the kitchen for me


this last weekend
everyone but myself
had haircuts
I do the boys
my sister, who is a hairdresser
gave girly her first haircut
girly got a lot of her hair cut off
