Zuchinni/Carrot Pancakes and Gelderman Sausage

It took all my will power
I resisted
it was difficult
I did not phone for pizza
as bad as I was craving for it
as much as I didn't want to cook

We went to the farmers market
I always like to look around
see what there is to see
Gelderman farms had a booth
they have amazing naturally raised pork
we bought some of their new garlic sausage
it smelled so good
so good that while it was defrosting
the cat got into it



being the frugal person I am
we still had it with dinner
I just cut off the ends where the cat chewed
sorry if that grosses you out
that's how we roll here



this was so so good
I can see why that cat wanted it
really amazing
and it's local
and natural
I know it really is
I've been to the farm
I've had numerous products from them
all amazing and good
you can get it at the local farmers market
and a few other places, like Neufelds

organic and so good
and yes carrots come in colors other than orange



I've made zucchini pancakes before
this time I added the purple carrots
my family couldn't get enough of them
and yes, I know I'm weird with food
my kids don't know any different
I know I feed them strange things





the kidlets and I had time to hit the park
the girly decided to try
and jump off the slide
it was pretty cute




and the little man
he's turning into the climber
he loves the park
as most all kids do

Menu Plan Monday - June 7



So Menu Plan...ya, I got nothin so far.....
Last week was hit and miss thru out the week, but not bad overall.
Monday we had BBQ meatballs with cheesy hashbrowns, this was very very yummy, not something I would make to often as it was a pretty heavy meal - but good!

Tuesday we had Split Pea Soup with Ham - it was not to bad, the family enjoyed it.

Wednesday was Chicken Fajitas - always a hit!

Thursday was the ButterNut Squash Sauce on pasta - SUPER GOOD!!

We won't talk about Friday and Saturday - I can't remember them. Sunday my sister was kind enough to make us some yummy spaghetti

This week......

Monday - I made pancakes tonight. We missed it on Sunday so I moved it to tonight as I had not done my menu plan yet. I used this recipe and it was a super hit. I cut the recipe in half and it still made a lot

Tuesday - My sister gave me some sauce that was left from the spaghetti so I plan to make a baked pasta

Wednesday - Soup - I'll fill you in on this one soon. I need to search something yummy out - likely chicken and something

Thursday - I saw a recipe for some lentil Tacos. I think I'll try those out, I'll need to find the recipe for them and I'll let you know.

Friday - french toast - something easy as I tend to not do great on Friday's for meals

Saturday - Perogies, bacon and onions - my husband has been asking for these

Sunday - Pancake attempt #3 - stay tuned!

So I don't seem to have it all together yet for my menu, but things will work out, I'm sure of it!

On the Search for Family Sunday Night Pancakes

Every Sunday night we do pancakes
I'm out of store bought mix
make my own from scratch you say?
sounds like a good idea
I used a recipe from Tasty Kitchen
however I didn't read the entire recipe before I made them
OPPS


I added ground milled flax
I wanted to use Whole Wheat flour
I was out
I couldn't figure out why it had lemon juice
I didn't read the directions
I didn't sour the milk
OPPS


these were ok
a bit spongy
the little man liked them fine


This was attempt #1
we'll see how it goes next Sunday
with attempt #2

Cast girl is making her way around the place
she is amazing


made it outside on her own


my little man loves his 'dirt hole'
it will have sand one day
but for now
he loves it like this

from her new method of getting around
we will have to think of something
or we will go thru a lot of clothes


she also successfully had a bath
I think it took longer to get her ready
then to bath her
