It's Not Delivery




I made the dough
and made the pizza
frankly,
I'm amazed that I did
but after I had
a half hour nap
I was revived

I scoured the
Tasty Kitchen site
and found this
Five Minute Pizza Dough
it look promising
and easy
just to be clear
the five minute part
is the time to rise
not the time to assemble

I love my kitchen aid
it's so handy

I warmed up the bowl
with hot water before
I started
then I added
1 cup of hot water
1 Tbsp rapid rise Yeast
I turned my mixer on low
to mix it up


I then added
2 Tbsp grapeseed oil
1 tsp salt
1 tsp sugar
and mixed it up


Then I added
the 2 1/2 cups of flour
1/2 cup at a time
mixing on medium
the dough
it didn't look
to promising
I was nervous
it was very crumbly
it did not look promising


I took it out
and worked all
the bits together
threw it back into
the mixer
turned it on high
and let it work
it turned out
thankfully


and the yummy
toppings
ham
salami
3 cheeses
onion
tomato


the dough
after sitting
for five minutes


I'm really not sure
what happened to
my rolling pin
I have a feeling
it made it's way outside
when we had our
dog that chewed things
just a guess
that a little
dark haired boy
helped it outside
but I have no proof
just this


so I rolled out the dough
avoiding slivers
this dough was
easy to work with
it was very nice


oh and today
here was my helper
I'm sure she was
just around waiting
for me to drop food
but the company was nice
she doesn't talk back
she just watches me
with adoring eyes


and the assembly
of the yummy pizza




baked at 450
for about 20 minutes
and delicious
is served



and of course
my little man
needed to demonstrate
just how the stegogaurus
eats all the plants


later
I came down
to get the kidlets
ready for bed
and I found girly
like this
her hair was a disaster
but she wore
the glasses
for a good long time

Chicken Soup good for the Soul


My mother in law
she made us
Chicken Soup
she knows
we have not kicked
our colds yet
it was nice
not to have to cook
chicken soup served up
with crackers, cheese and apples


our colds are
hanging on
the kidlets seem
to be feeling alright
but have runny noses
and coughs
I seem to have
a constant headache
girly was in cuddle mode today
I look like crap
but I couldn't resist
this cute picture
of girly and me

Dad's Chili


Rainy
Windy
Cold
what is better
than Chili
on a day like today
and of course
nothing is better
than my Dad's Chili


I'm sure my joy
for cooking is from my Dad
actually I know it is
my mom
she greatly dislikes cooking
there is always
one or more dishes
that you can just never
make as good as you
remember it being
when you were growing up
this is one of those
it's simple
I've tried
but it just never
never tastes as good
as when Dad makes it


I'm very excited
that he made me
a very large
amount of chili
to freeze
YAY

Menu Plan Monday


Considering how sick
we have all been
I'm impressed with
the new meals I did
manage to make
however,
I did miss a few meals
so I'll move them
to this week

The highlight last week
was totally the
Pumpkin and Black Bean Chili
yum yum


My parents are staying
here for a night
before they head off
down south for the winter
I used my puppy dog eyes
and my status as the youngest
and sweetly requested
that my dad make
a large pot of his
amazing chili for us
to eat and freeze
he can't say no
to his youngest
unless I ask him for money
then he says no
he also will say no
if I ask him to shovel snow
Love you Dad!

Did you Know




We are all sick
it's been close to
three weeks
it's crummy

Did You Know

people say
if you put
vicks vaporub
on your feet
then put socks on
at bedtime
it's supposed to
stop you from coughing
during the night
when you know
you cough the most

I have done this
it's smelly
my feet feel gross
but it really does work
HONEST
I'll be doing
this tonight
this is not the
face of a person
who would lie to you



so during this cold season
give it a try
what do you have to loose
if nothing else
you will get some nice soft feet

Attempt #2 - Tofu Stirfy


I was missing a few ingredients
for the Potato Leek Soup
so I had to rethink my dinner

Tofu Stir fry

I had to try again
I just knew I could
make it better
then my first attempt

1 pkg firm tofu
2 TBSP grapeseed oil
1/2 yellow pepper
1/2 red pepper
1/2 yellow squash
1/2 zucchini
1 small shallot
stir fry noodles
stir fry sauce
small amount soy sauce

So this time
I fried the tofu
in the oil
until it was crisp
then added
a small amount
of soy sauce to the pan



in a separate pan
I cooked up the veggies
and the noodles
added the sauce
(it was a premade one)
just before I served it
I added the tofu
to the veggie/noodle mix
that is what was
left of the tofu
considering my little man
was stealing it while I cooked

the result
a much more edible

he ate this up
and loved it
my main man and I
enjoyed this much more
then my first attempt
the girly
she didn't eat much
she is still pretty sick

the kidlets
they had a fun day
trying on their space helmets



and they flew
in their space ship
of course they did
because they had
the helmets


they also spent
some time coloring
on the floor
on paper on the floor
that is


and they took a drive
I'm not sure where
but a drive
or so I'm told


it's nice that
my little man
is feeling somewhat better
my girly
has her moments
she's not feeling
super great yet

Pumpkin and Black Bean Chili


My cousin sent me the recipe
it's from a blog I had not seen
but now that I know about it
there are some very yummy recipes
for me to try

Pumpkin and Black Bean Chili
this recipe had a lot of interesting
ingredients in it
I didn't have the instant coffee
I used brewed coffee
I also forgot to pick up tomato sauce
so I used tomato paste and mixed it with water
I also used a little less hot sauce
I had kidlets to consider


now, let me just say this
and I've said it before
if I'm using a slow cooker
I REFUSE to double cook
I just don't understand
why you would do that
I put the hamburger raw
into my sprayed slow cooker
yes RAW, you read that right
and I didn't cook the onions
I'm a rebel
by cooking the hamburger in
the slow cooker
it's much more tender
and you don't end up
with the large chunks
I prefer it more tender
I just made sure to
break it up
and stir it a few times


I used the butternut squash
I had saved half of it from
the Autumn Mac and Cheese
and I roasted it
to add to the chili


This dish was
A.M.A.Z.I.N.G
seriously
A.M.A.Z.I.N.G
I wasn't sure
the ingredient list
was very interesting
I took a bite it was good
I took a bite with the squash
it was fantastic
really you need to try this

I also made the
fluffy buns
however this time
I used half the amount of sugar
as well as
I did half white flour
and half whole wheat flour
YUM

she has now been hit
with the cold
she looks so sad
she had a rough day
