Honey Garlic Chicken


This recipe originally
called for it to
cooked in the slow cooker
I was so tired
I never got it in the slow cooker
so I adapted it

Honey Garlic Chicken

3/4 cup honey
3/4 cup lite soy sauce
3 Tbsp ketchup
2 cloves garlic, crushed
1 Tbsp Ginger root, minced
3 boneless, skinless chicken breast halves
1-20 oz can pineapple tidbits, drained with juice reserved
2 Tbsp cornstarch
1/4 cup water


In a frying pan
with sides
cook the chicken
with a small amount
of grapeseed oil
I cut the chicken into strips

add the garlic
along with the ginger
to a small pot


add the honey
soy sauce
ketchup
and pineapple juice
letting this cook
and boil for at least 10 minutes


mix the cornstarch
with the water
then add to the sauce
once the sauce thickens
then add it to the cooked chicken


let this simmer
for just a short time
then top with sesame seeds
and chopped green onions


then if you are like me
you forgot to add the pineapple
so add it in
it makes the dish
taste even better


I served this up
with a vegetable chow mien
