Indian Spiced Yogurt BBQ Chicken #2


I've BBQ'd an
Indian Spiced Yogurt Chicken
before and we enjoyed it
my in laws came for dinner
the meal I had planned
was a fair amount of work
so I wanted something easier
and I had some Greek Yogurt
that needed to be used

12 bone in, skin on chicken thighs
1 tub greek yogurt
3 tablespoons Garam Masala
1 tablespoon cumin
1 tablespoon tumeric
add it all into a ziplock bag
and mush it all around
to coat all the chicken


Warmed the BBQ on high
Turn off half the BBQ
put the Chicken Thighs
on the half that is off
this is called
indirect heat for cooking


close the lid
leave it to cook
for a minimum of 2 hours
checking about every half hour
you don't want to lose the heat
move around any pieces
that look to be cooking fast
with those that are cooking slow
but keep the moving to a minimum
cooking it for 2 hours or more
will make the skin nice and crisp
and the meat nice and moist


I served this with brown basmati rice
and roasted vegetables
including half an acorn squash


if you have not cooked
with an acorn squash
it's a bit of a tough squash
use a good knife
to cut the squash in half
scoop out the seeds


cut the squash into wedges
you could sprinkle some nutmeg
and roast it like this
the squash is very versatile


I peeled the skin off
and diced it small
and roasted it with
a ton of other
very colorful veggies


This was a very
very wonderful meal
my kidlets
they each ate three pieces of the chicken


my mother in law
is a fantastic baker
today she brought a homemade pie
rhubarb, apple and banana


she used apple and banana
because she cut the sugar
and used these to help sweeten the pie
so fantastic as always

Spaghetti Squash, Roast Veggies and Farmer Sausage


I am starting to LOVE
Spaghetti Squash
I'll tell you again
if you have not tried it
you really must
and Roasted Vegetables
melt in your mouth goodness
cut up your veggies
the more color the better
mix with grapeseed oil
and fresh cracked pepper
bake at 400
45 minutes to an hour
stirring a few times


take your spaghetti squash
poke holes all over it
or it WILL explode
trust me
I know from experience
then put the squash
in your microwave for 5 minuets
turn the squash
microwave another 5 minuets
check to see that the squash is tender
if not, turn it around again
and microwave more
cut it open
scoop out the seeds
use a fork to remove
the spaghetti like flesh
the kidlets were circling
so I let them munch
on the salad
while I finished up


With the squash
I mixed in pesto
mozzarella
cooked farmer sausage
and the roasted vegetables


so good
go now
try it
it's an easy meal

Spaghetti Squash with Roast Veggies


I have taken advantage
of Spaghetti Squash this season
we really enjoy it
and it's so very easy
to prepare
I generally will
roast some veggies
with garlic and onion
and we add some cheese
to mix them all together



you need to poke the squash
a lot
and with a strong fork
if you don't,
IT WILL EXPLODE
in the microwave
I've experienced this
it's not pretty
cook it for 5 minutes
then turn it
cook it for 5 more
then check if it's soft


once the veggies were roasted
I mixed it all together
with about 1 cup
of shredded mozzarella cheese
I put it back in the oven
for a few minutes
until my farmer sausage was done
we really all like this dish
if you haven't tried
spaghetti squash
now is the time!!

Spaghetti Squash Throw Together


I had received
a Spaghetti Squash
from my sister
we enjoy spaghetti squash
but I wasn't sure
what I wanted to do with it
so I threw somethings together
and had an amazing meal
AMAZING

I started with
2 carrots
small head of broccoli
one onion
3 cloves of garlic
2 tbsp of grapeseed oil
pepper
roasted for 30 min at 400
stirring once or twice
if you have
never roasted vegetables
you really must try it
they are so good


I cooked up some hamburger
added a 398ml can of diced tomatoes
one teaspoon-ish curry powder
a few large tablespoons of Ricotta cheese


I decided to add
a few handfuls of spinach
to wilt down


cooked 1/2 a spaghetti squash
in the microwave
for about 8 minutes
use a fork
to remove the squash
add the the roast veggies


then add the meat mixture
and about a cup of
shredded mozzarella cheese
mix it all up
dump it into
a casserole dish



then add some more cheese
mozzarella and Parmesan
it's extra yummy
girly thought it
might need more carrots


bake in the already hot oven
basically just until
the cheese melts
I turned it to broil
for just a few minutes
to brown it up a bit


this was so so YUMMY
it didn't need any
extra seasoning
and it was easy


we all loved it
well, I say all
as in those of us
who actually tried it
girly
she wouldn't try it
but she's been
on a dinner strike
for about 2 weeks
she ends up spending
most of dinner
in a timeout


the little girl's dinner
is waiting in the fridge
we'll see how she
likes it for breakfast
I purposely gave them
a small lunch
of just popcorn
and no afternoon snack
I'm really not worried
just annoyed
it's good food!

Spaghetti Squash Casserole with Roasted Vegetables


SO SO SO
YUM
Really

You must try this
if you have never tried
spaghetti squash
start with this recipe

1 medium spaghetti squash
1 can of diced tomatoes
3 patty pan squash
3 spaceship squash
1/2 zucchini
1/2 an onion
1/2 cup Parmesan cheese
1/2 cup Cheddar cheese
2 tablespoons grapeseed oil
salt and pepper

cut up the pattypan
spaceship, zucchini and onion
drizzle with the grapeseed oil
and salt and pepper
roast at 400
stirring a few times
until tender and caramelized


take your spaghetti squash
poke it with a fork
ALL OVER
really
my last one exploded
because I didn't do enough
put the squash in the microwave
for 5 minutes
turn it over
cook for another 5 minutes
let it cool a bit
slice it
scoop out the seeds
use a fork to remove
the insides
they will look like noodles
hence the name


add the drained diced tomatoes


add the yummy
roasted vegetables


add the cheese
mix it all up
put into your sprayed casserole dish
top with chedder
back at 350 for 30ish minutes


I served with
farmer sausage
and a great salad
this was so
amazing

Attempt #2 - Tofu Stirfy


I was missing a few ingredients
for the Potato Leek Soup
so I had to rethink my dinner

Tofu Stir fry

I had to try again
I just knew I could
make it better
then my first attempt

1 pkg firm tofu
2 TBSP grapeseed oil
1/2 yellow pepper
1/2 red pepper
1/2 yellow squash
1/2 zucchini
1 small shallot
stir fry noodles
stir fry sauce
small amount soy sauce

So this time
I fried the tofu
in the oil
until it was crisp
then added
a small amount
of soy sauce to the pan



in a separate pan
I cooked up the veggies
and the noodles
added the sauce
(it was a premade one)
just before I served it
I added the tofu
to the veggie/noodle mix
that is what was
left of the tofu
considering my little man
was stealing it while I cooked

the result
a much more edible

my little man
he ate this up
and loved it
my main man and I
enjoyed this much more
then my first attempt
the girly
she didn't eat much
she is still pretty sick

the kidlets
they had a fun day
trying on their space helmets



and they flew
in their space ship
of course they did
because they had
the helmets


they also spent
some time coloring
on the floor
on paper on the floor
that is


and they took a drive
I'm not sure where
but a drive
or so I'm told


it's nice that
my little man
is feeling somewhat better
my girly
has her moments
she's not feeling
super great yet

Pumpkin and Black Bean Chili


My cousin sent me the recipe
it's from a blog I had not seen
but now that I know about it
there are some very yummy recipes
for me to try

Pumpkin and Black Bean Chili
this recipe had a lot of interesting
ingredients in it
I didn't have the instant coffee
I used brewed coffee
I also forgot to pick up tomato sauce
so I used tomato paste and mixed it with water
I also used a little less hot sauce
I had kidlets to consider


now, let me just say this
and I've said it before
if I'm using a slow cooker
I REFUSE to double cook
I just don't understand
why you would do that
I put the hamburger raw
into my sprayed slow cooker
yes RAW, you read that right
and I didn't cook the onions
I'm a rebel
by cooking the hamburger in
the slow cooker
it's much more tender
and you don't end up
with the large chunks
I prefer it more tender
I just made sure to
break it up
and stir it a few times


I used the butternut squash
I had saved half of it from
the Autumn Mac and Cheese
and I roasted it
to add to the chili


This dish was
A.M.A.Z.I.N.G
seriously
A.M.A.Z.I.N.G
I wasn't sure
the ingredient list
was very interesting
I took a bite it was good
I took a bite with the squash
it was fantastic
really you need to try this

I also made the
fluffy buns
however this time
I used half the amount of sugar
as well as
I did half white flour
and half whole wheat flour
YUM


my girly
she has now been hit
with the cold
she looks so sad
she had a rough day
