Whole Wheat Zucchini and Carrot Muffins


I found the recipe
on the Tasty Kitchen Site
I changed it a bit
and we are enjoying the
yummy muffins

Whole Wheat Zucchini and Carrot Muffins

⅓ cup Rolled Oats
2 cups Whole Wheat Flour
⅓ cups Brown Sugar
2 teaspoons Baking Powder
¼ teaspoons Baking Soda
½ teaspoons Salt
1-½ teaspoon Ground Cinnamon
1 1/2 cups Grated Zucchini
1 1/2 cups Grated Carrot
1 cup Buttermilk
2 whole Eggs
¼ cups Butter, Melted

Preheat oven to 375 degrees
Stir together all dry ingredients in a large mixing bowl


Fold in the grated zucchini and mix until it is well coated with the dry ingredients




In a small bowl whisk together the eggs, buttermilk and melted butter


Fold into dry ingredients stirring just until combined


Spoon batter into prepared muffin cups


Bake about 20 minutes

The original recipe
calls for a struesel topping
I didn't add this
but I would next time
these muffins are not sweet
I normally would cut
the amount of sugar
but I didn't this time
as it was such a small amount already
the struesel would add
a touch of sweetness
these were good
even without the sweetness


in other news
we added to our tribe
my sister gave us
a little fish tank
so the kids each
have a little gold fish
my little man
named his Dinosaur
my little girly
named hers fish
little Lily
she likes them


I also got a fish
Simon
he's in solitary
he should have been okay
with the gold fish
but he must have decided
their fins were too pretty
so he attacked them - a lot

it was a bit cold
but after all the rain
we needed to get out

Uninvited Guests

Last year, around this time
we had many uninvited guests
the mice were living
in our basement ceiling
it was very noisy
we had one adult cat
and one kitten
Blue the adult cat
caught his fair share
I killed my fair share
with a shoe
the traps caught their fair share
but the traps didn't always finish the job
that was left to me
not a job I signed up for
We found the problem
fixed the problem
and we had no more mice
UNTIL
last week
I heard the all to
familiar sound
we now have three cats
they all heard the mice too

to see which one
would make the first move

it doesn't seem so

Time to get out
the traps
and keep a shoe close at hand

Oh, you like my Dog's Coat...Why Thanks


I've always said
a dog is fine outside
I've always thought that
but I've not had
a dog with this short hair


I still think a dog
belongs outside
but we have a dog
that is not made
for our cold climate


Chance now spends time
in our kitchen
he has been great about it
however
he is not a fan
of his coat
he was pouting


But he is warm
and not in the cold
and the wind
however
as soon as it warms up
out he goes....

Animals around here

It's no secret
I'm an animal lover
well, domestic animals that is


I don't enjoy
mice, rats, frogs
ants, beetles, spiders
or small things
that make unexpected movements


yet, I've had all these
in my house
or in the case of the rat
dead on my doorstep
by a loving kitty


yesterday
I saw movement
I thought it was a mouse
I called my husband
and I went to grab a shoe
a shoe has proved to be
a good way to kill mice
trust me
I have a lot of experience
sadly
but no
it was this little guy


I have no clue
how he got into the house
with sick kids
we haven't been outside much
I may or may not have
screamed, just a little
when I snapped this
next picture


this is the frog
moving unexpectedly
as in I wasn't expecting it
I more enjoy my domestic animals
they are a bit more predictable



my girly
she takes after her mommy
(that's me, FYI)
she loves our animals
it's so cute



I just have no clue
how all these other animals
manage to get in our house!
