Menu Plan Monday..errr..ahh....Tuesday?



Hmm, I'm a day off
but I have done my menu plan
oh stop with the applause already

Last week went well
we did order in one day
however my folks covered it
we are still finishing off a few things
from the renos we started last May

Beef and Broccoli



We had...Potato Soup
but no pictures

Spaghetti



Mashed Potatoes with Swiss Chard and creamy chicken


Zucchini/Carrot Pancakes with Gelderman's Garlic Sausage


So of course it's actually Tuesday
Monday we had grilled cheese and tomato soup
Tuesday we had homemade pizza
on to Wednesday
I made a plan
but I'm rethinking it a bit
I still have potatoes to use
and to be honest
I can't find the paper
the one with the menu on it
ahhh...opps

Wednesday - Hashbrown Casserole with Salad

Thursday - stuffed baked potatoes

Friday - sloppy joes with cut veggies

Saturday - red lentil and noodle chicken soup - sounds interesting

Sunday - Pancakes

I have to hit Neufleds
I need a few more items
since I've rethought the plan

It's raining here
I do like the rain

Zuchinni/Carrot Pancakes and Gelderman Sausage

It took all my will power
I resisted
it was difficult
I did not phone for pizza
as bad as I was craving for it
as much as I didn't want to cook

We went to the farmers market
I always like to look around
see what there is to see
Gelderman farms had a booth
they have amazing naturally raised pork
we bought some of their new garlic sausage
it smelled so good
so good that while it was defrosting
the cat got into it



being the frugal person I am
we still had it with dinner
I just cut off the ends where the cat chewed
sorry if that grosses you out
that's how we roll here



this was so so good
I can see why that cat wanted it
really amazing
and it's local
and natural
I know it really is
I've been to the farm
I've had numerous products from them
all amazing and good
you can get it at the local farmers market
and a few other places, like Neufelds

Check out these amazing carrots
from Friesen farms
organic and so good
and yes carrots come in colors other than orange



I've made zucchini pancakes before
this time I added the purple carrots
my family couldn't get enough of them
and yes, I know I'm weird with food
my kids don't know any different
I know I feed them strange things





the kidlets and I had time to hit the park
the girly decided to try
and jump off the slide
it was pretty cute




and the little man
he's turning into the climber
he loves the park
as most all kids do

Mashed Potatoes with Swiss Chard

Swiss Chard
what do you do with it
seriously?!
I remembered a dish we make with Kale
and sorta used that as a reference

Swiss Chard is pretty
and healthy
if a food has great natural color
it must be really good for you



I cut the tough stalk out



chop it all up
nice and small



add it to some wonderful
potatoes
and garlic



boil away
until the potatoes are done
when a fork goes thru them with ease



now here is my secret
I often get a ton of complements on my mashed potatoes
and I'm going to share my secret
it is not any kind of healthy
at all.....not healthy
add a crap load of grated Parmesan cheese
a healthy amount of sour cream
a good portion of butter



mash it all up
mash mash mash



I served this with
some chicken in a mushroom gravy
with shallots and garlic
and some roasted broccoli and pattypan squash



the kids and I had a great day
I accomplished a bunch of little jobs
one, was to trim our dogwood tree
so we could actually walk on our sidewalk again



of course the kidlets
loved to play in the cut branches



and play on their Daddy



and learn to share

Randomcity



Sometimes I wonder if life will slow down
then I think I just make it busy
who really knows
my menu plan as been okay
I made a fantastic potato soup
no pictures
I couldn't find my camera

Tonight I was too tired to think
so we had spaghetti
easy
yummy
always a hit


this week we lost a pet
and gained a pet
our dog needed to leave
he was biting
we are on the hunt for a new dog

our new pet
a nother cat
she was homeless
starving
and followed me home
HONEST
my husband says he saw
me go in the ditch to get her
I didn't
HONEST
but I didn't discourage her
from coming home with me


my little man named her Diego
I don't have the heart to explain
it's a boy name and a girl cat
Diego loves us
she brings us many many presents
a few mice a day
normally uneaten
sometimes alive
sometimes dead
until today


isn't that wonderful to come home to
it's so nice she loves us
she is actually an amazing cat
and yes
I am now the crazy cat lady
I'm coming to terms with this

I needed a nap
I sent my wonderful amazing husband out
with the kidlets
to costco
right before the last weekend of summer vacay
not the nicest for him
heaven for me
girly helped to bring in the groceries



we will see what tomorrow brings
I need to review my menu plan
I can't remember what I planned!

Monday August 23/10






Beef and Broccoli
SO SO GOOD!
I used a package of seasoning
I added cabbage and carrots
served on rice
This will be on the menu again!

My in laws came for dinner
my father in law is very good at playing with the kids
it's so fun to watch



a new kitten followed me home
she is so sweet
but I can't keep her
I already have 3 cats.....
the kids of course love her

Menu Plan Monday



I'm happy to be planning again
last week was all over
I need a plan
I work better

Here goes....

Monday - Beef and Broccoli on spaghetti squash. Sounds interesting on the squash, but I thought I would give it a try

Tuesday - I have a ton of potatoes that I need to use. So I think I'm going to try a potato soup of some sort again.
I'll likely just figure it out on the fly

Wednesday - I have some left over beef and veggie mix from our nachos the other night so I'll make quesadillas - almost always a hit

Thursday - sweet and sour chicken from the other week on brown basmati rice

Friday - spaghetti with meat and veggie sauce

Saturday - left overs

Sunday - Pancakes

It should be a good week. We might be going campin on Thursday so I'll see how this works out. But it will depend on how my week goes!

Sliders...Take #2


These are yummy and easy
I picked up a package of a dozen slider buns
some deli ham
added some onions
some yummy basil
some spinach
some parm cheese


them piled on
some thinly sliced tomatoes
some thinly sliced zucchini
salt
pepper


then to make it even better
some shredded old cheddar
some thyme
oregano
cumin
coriander
some more parm cheese
then put the tops back on


bake at 350
until done....
be careful not to burn the bottoms


these are very yummy
and really versatile
add whatever you want
MMMMM
