Tempt my Tummy Tuesday - Rhubarb Crisp




So the girly is all good, but I seem to have a bit of her flu and have been out of commission for today. Thankfully my husband had the day off and stepped up and let me relax as he took care of the kids. He even made dinner - I am so incredibly thankful.

But I still want to tempt your tummy! A few weeks ago I made a rhubarb crisp. I love rhubarb in baking. I don't have a rhubarb plant and this makes me so sad. I didn't have a recipe, but felt it would be pretty much like my apple crisp - I don't have a real recipe for that either!

I picked up some rhubarb at Neufelds - a little chicken shop in the country that has started supplying more items and promotes local, I love that, plus they are just around the corner from me so I don't have to drive into town

My little man had never had rhubarb before so I made sure I got him some sugar to dip a piece in. We used to walk around with a cup a sugar and pick rhubarb from my mom's plant.


He thought it was sour - he'll learn the rhubarb love soon enough



So I cut it up and my helper loaded it into the dish

That's my husband in the backgroud, I told him to smile nice and this is what he gave me....nice


here my helper is displaying the rhubarb that I added about a cup of sugar to...to help cut the sour and I sprinkled some flour on it also to thicken up the sauce that will form


in a bowl I added oats, brown sugar, a small amount of flour and butter

The measurements are up to you. I love a thick crust so I add extra


I use two knives and just cut thru the mixture until it is crumbly


add it to the rhubarb and throw it in a 350 oven

until it's nice and brown and bubbling around the sides


Enjoy the yummy yummy rhubarb for this season

This is still a bit tart so be sure to have some vanilla ice cream or whipping cream on hand

  1. Mmmmmm....I LOVE rhubarb!!!! I can't get it here and I miss it. It is sour but SO good!!! And look at you, amazing woman that you are, you updated your blog even when you don't feel good. I admire you. :)
