ButterNut Squash Pasta Sauce

The house smelt like October
Pumpkin
generally we like Butternut Squash
on pasta? I wasn't sure
But let's try it

I found the recipe here

I first roasted garlic
cut the tops off
drizzle olive oil
salt
pepper


roast @ 350
for about half an hour
it should look like this
when it's done


while the garlic is roasting
you need
a medium Butternut squash
olive oil (I use grape seed oil)
1 1/2 cups vegetable stock
(you can use chicken stock but we had vegetarians for dinner)
salt
pepper
whole wheat spaghetti
1 1/2 cups reserved liquid from pasta


poke the squash all over
put in microwave for 2 minutes
it will soften it a bit
so it's easier to cut
peel the squash
with a veggie peeler


slice the top off
cut the bottom part in half
scoop out the seeds


cut up the squash
have your helper
help you



season with salt & pepper


add the oil
cook
for a bit


have your photographer document it

he's not cheap


put your helper to work
while it cooks


add the stock
bring to a boil
cover
simmer
cook until tender


when tender
put in food processor
add 6-8 roasted garlic cloves
we really like garlic
it's good


process until smooth
I thought it was a bit lumpy
once I added the starchy liquid
it smoothed out
it looked great

our company had a buddy for our little man
they like each other
dirt
and spiders
plenty in common
it was very cute





We all had a fantastic walk
these two grownups are so cute
my kidlets love them
so do we
they shine God's love and goodness
it comes through every pore

very odd thing happened
a swarm of bees
1000's of them
came through our yard

  1. hey look its Mini-Phil and Mini-Will!!! LOL too cute. And I don't like that swarm of bees. eek! I'd run inside too... yowzers! Never seen anything like it. Strange.

  2. You have a cute little kitchen helper! I'm happy that my kids seem to like garlicky dishes as much as I do! That pasta/squash dish sounds yummy!
