Monday August 23/10






Beef and Broccoli
SO SO GOOD!
I used a package of seasoning
I added cabbage and carrots
served on rice
This will be on the menu again!

My in laws came for dinner
my father in law is very good at playing with the kids
it's so fun to watch



a new kitten followed me home
she is so sweet
but I can't keep her
I already have 3 cats.....
the kids of course love her

Menu Plan Monday



I'm happy to be planning again
last week was all over
I need a plan
I work better

Here goes....

Monday - Beef and Broccoli on spaghetti squash. Sounds interesting on the squash, but I thought I would give it a try

Tuesday - I have a ton of potatoes that I need to use. So I think I'm going to try a potato soup of some sort again.
I'll likely just figure it out on the fly

Wednesday - I have some left over beef and veggie mix from our nachos the other night so I'll make quesadillas - almost always a hit

Thursday - sweet and sour chicken from the other week on brown basmati rice

Friday - spaghetti with meat and veggie sauce

Saturday - left overs

Sunday - Pancakes

It should be a good week. We might be going campin on Thursday so I'll see how this works out. But it will depend on how my week goes!

Sliders...Take #2


These are yummy and easy
I picked up a package of a dozen slider buns
some deli ham
added some onions
some yummy basil
some spinach
some parm cheese


them piled on
some thinly sliced tomatoes
some thinly sliced zucchini
salt
pepper


then to make it even better
some shredded old cheddar
some thyme
oregano
cumin
coriander
some more parm cheese
then put the tops back on


bake at 350
until done....
be careful not to burn the bottoms


these are very yummy
and really versatile
add whatever you want
MMMMM

Turkey Burgers


Neufelds had a sale on Turkey
so I decided, YUM, burgers
in my food processor I diced up
one large onion
organic carrots

a few handfuls of spinach
some organic garlic
organic zucchini
organic basil

added an egg to hold it together
some salt and pepper
some worshishire sauce
and made me some patties

I fired up the BBQ
slapped on my patties
added some sliced zucchini to the Q
and made up a salad

we added all the condiments
with lettuce
tomato
basil
grilled zucchini
pickles
on fresh buns from a little deli

these were good
but not great
they need to be spiced up a bit
but I will be making them again

we added to our family
a little kitty
because it seems I don't have
enough animals
or enough stress



I want to ask for you to pray for my friend Helen, who I mentioned in my previous post.
She starts her Chemo treatments tomorrow. I know that she really appreciates every ones prayers and needs them.

Prayer


I grew up with Helen. Here she is with her husband Jesse. Our families camped together every summer and our parents good friends. I have many memories of their dairy farm and jumping on their trampoline and helping in the barn. Helen and my sister were best friends growing up and still remain close today separated by two provinces. Helen and her family now live farther away and have 4 beautiful children.
But we can always keep in tough via facebook and my sister's updates.

Helen has very recently been diagnosed with an aggressive form of ovarian cancer. This cancer is really taking a round out of her. My heart breaks and this hits very close to home for me. I've been lucky enough to not have been personally affected by this terrible disease....until now.

If you pray, please I beg, pray for her and her family. Helen is an amazing women of God with a servants heart. She is an amazing mom, wife, daughter and friend. Her family needs to feel God's grace and comfort as I know they are all praying for it now. I'm often at a loss of words with what to pray, but God knows my heart and He knows yours. Remember Helen and her family tonight as you lay down to sleep.

Broccoli and Cheddar Soup

My menu plan has changed
my sister gave me a bunch
of broccoli and squash

I decided to make
broccoli and cheddar soup
YUM
just wait to see what I do
with the squash

I started with a large amount of broccoli
and cut it all up
to make it small



I added a bunch of organic carrots
because I had them
they are sooo good
from my garden box program
I added 2 boxes of chicken stock (900 ml each)
enough to barely cover the broccoli and carrots
boiled it for about 10 minutes



while my veggies boiled
I made roux with onions and garlic
in a pan put butter and onions and garlic



cook until bubbling
add some flour



cook for a bit
this helps to take away
the flour taste



add milk
to make this a cream soup
cook for a bit longer
so it thickens up
try not to let your whisk fall in



add to the soup mix
add salt and pepper
I simmered for an hour or so
I added a whole bunch of cheese



I made up some corn bread
to serve with this yum yum yummy soup

camping
enjoying the sun
hanging out
girly has her cast off
little man is growing fast

Menu Plan Monday



I'm back

I'm feeling better

July was difficult for me

I'm moving on

no need to rehash

I hope you'll forgive me


I've not done a menu plan for a few weeks

I need to get back at it

here we go.....


We've done a lot of camping

and didn't have to much of a plan

I'm glad to be home


Monday - I'm making a homemade Mac n' Cheese dish with ground beef added to it and a salad

no recipe that I use, I'll try to get it posted for you


Tuesday - my husband has requested sweet and sour chicken...I've no clue what to do with that. I'll make chicken of some sort with potatoes and salad


Wednesday - homemade turkey burgers with Salad - again, no recipe, I'll try to get it posted


Thursday - fancy grilled cheese with tomato soup and cut up veggies


Friday - chili from the freezer with cut up veggies


Saturday - left overs or eggs and toast


Sunday - pancakes a family favorite


It's my hope to get back into regular posting
