Whole Wheat Chocolate Chip Scones


Scones are so easy
honest
I'm still surprised
at how super easy scones are
my little man
helped me out today
he hasn't cooked with for some time

Whole Wheat Chocolate Chip Scones
8 scones

1-¾ cup Whole Wheat Flour
1-¾ cup All-purpose Flour
¼ cups White Sugar
¼ cups Packed Light Brown Sugar
1 teaspoon Baking Powder
1 teaspoon Baking Soda
¼ teaspoons Salt
3 Tablespoons Ground Yellow Flaxseed Meal
3 Tablespoons Old Fashion Oats
6 Tablespoons Butter
1 whole Large Egg
1 cup Nonfat Buttermilk
1 teaspoon Vanilla Extract
¾ cups Dark Chocolate Chips


Spray a cookie sheet with nonstick cooking spray. Preheat oven to 375F.

I didn't have buttermilk so before I did anything - I poured just short of 1 cup of milk and added 1 tablespoon of white vinegar, then a bit more milk until it's 1 cup and let this sit for a few minutes while I started with the next step

In a large mixing bowl, stir together flours, sugars, baking powder, baking soda, salt, flaxseed meal and oats. Cut in butter using two knives or a pastry blender, until mixture resembles coarse crumbs.

In a small bowl, whisk egg, buttermilk (the milk mixture I had made already) and vanilla together. Pour into dry ingredients. Mix until dough is moist. Stir in chocolate chips. Turn dough out onto a lightly floured surface, kneading two or three times - I found that I had to knead this much more until with combined nicely together and wasn't flaky. Divide dough in half.

Pat each half into a circle, about 6 inches across. Cut dough into 6 wedges. Transfer to the prepared cookie sheet. Bake at 375 on middle rack of oven for 20-22 minutes. I um actually didn't read this paragraph and baked at 350 for about 30 minutes.

We also mourned the fact
that we had a huge snowfall
but it was already raining and melting
so we couldn't play in it


back to the scones
the kidelts have long
taken off to play
but came back as soon
as they knew these were done
these baked up very nice
thicker than the Lemon Sconesfrom last week


we added a bit
of real butter
to make it extra yum
they were a bit dense
but still yum yum


both kids gave it
thumbs up
or the best thumbs up
they could manage

  2. I've never attempted making scones before, I always thought they would be hard to make. I'll have to try making some soon. I love the idea of adding chocolate chips like you did.

  4. Crystal, so easy you'll wonder why you waited so long to make scones. the hardest part, well there is no hardest part! it's only my second time making scones.
